Turkey Meatball Meal Prep

This week on the menu I made 5 lunch meals that included ground turkey, asparagus and petite potatoes.


Not only is each meal high in protein and nutrient dense but it only took me 15 minutes to prep! Tasty and easy are my go to requirements when it comes to meal prep.


What you will need:


2 lb ground turkey (I used 93% lean)

1 bag petite potatoes (25 oz.)

500 grams asparagus

1 tbs extra virgin olive oil

3 tbs italian blend seasoning herbs

1 tsp garlic powder

Ground turkey meatballs:


Tip- Turkey meatballs are really easy to make and freeze really well. Anytime ground turkey goes on sale at your local grocery store make a couple batches. They are super quick to bake and make a quick lunch from the freezer .


Preheat oven to 450 degrees. In a large mixing bowl add 2 lbs ground turkey, Italian herbs and garlic powder. With your hands mix the turkey and seasoning to combine the seasoning into the meat. Separate and weigh out 3 oz of turkey and roll into a ball. Place in a deep cooking dish. Bake for 20 minutes or until the outside is golden brown.

Asparagus:


Preheat oven to 450 degrees; trim edges of asparagus, add 1 tsp of olive oil and garlic powder then toss in large mixing bowl. Lay asparagus flat on cookie pan and cook for 20 minutes.


Petite Potatoes:


Preheat oven to 450 degrees. Petite potatoes are usually already washed but if your bag is not washed please do so to clean off any dirt that may still exist on your potatoes. Cut your potatoes into 4 halves and place in large mixing bowl, add Italian seasoning and garlic powder and toss. Lay the potatoes flat in a large baking dish and cook for 25 minutes.


Once each of your items is done cooking separate them into 5 containers.

Here is the link to the containers I use, I would recommend them since they have lasted me a long time but most importantly they are large and deep which I prefer.

After everything is separated pop your containers in the refrigerator and enjoy your tasty lunches throughout the week!
